Quick & Healthy Breakfast Ideas (001)

Breakfast is the most important meal of the day! Cliche, I know. But it honestly is; it's the first meal you consume after hours of being in a fasted state. Eating a light yet well balanced breakfast, full of essential nutrients will quite literally, jump start your system.


In the past I would often skip breakfast because I was simply "too busy to eat". I've since learned the error of my ways and now strive to eat healthy breakfasts each day. I hope to inspire you all to do the same as I continue to try new, healthy meals.


Today's breakfast consists of adobo scrambled eggs with spinach and bell peppers, toast with olive oil and sea salt butter topped with black pepper and a double berry smoothie!


Tips:

  1. Cook down the spinach and peppers before adding in your eggs. This will cook out any excess water from the bell peppers which will make the eggs soggy.

  2. Make enough eggs for TWO days! This has been a game changer for me. I'll store the leftover eggs in a container and heat them up within 2 days that way if I want something different the next day I can still have the eggs on day 3!

  3. For my double berry smoothies I typically buy my strawberries and blueberries in bulk. That same day I'll wash, cut and separate them into freezable ziplock bags (date the bags). The berries can then stay frozen for up to 6 MONTHS! Whenever I'm ready for my smoothie I simple thaw the ziplock bag the night before, dump it into my blender and Voilà!

Double Berry Smoothie Recipe:

1 ziplock bag of blueberry and strawberry mix

Almond milk

Vanilla Greek Yogurt
