Whether it be store bought salsa or homemade, salsa with tortilla chips are a quick, healthy and my personal favorite snack. This week I wanted to try something new and made a quick and easy mango jalapeno salsa. This salsa has a strong caribbean flare and is the perfect dish to bring to a picnic, cookout or even add as a topping to caribbean style meats.
Ingredients:
2 ripe but firm mangos
2 small orange sweet peppers
2 small yellow sweet peppers
1/2 red onion
2 jalapenos
1 lime or 1 tbsp of lime juice
8 sprigs of cilantro
1/2 tsp of salt
Preparation:
Dice the mangos (keep separate and store in the fridge for now), sweet peppers and red onion. Dice and seed the jalapenos but save some seeds to add spiciness to the salsa when mixing.
Heat a medium size nonstick skillet and saute the sweet peppers, jalapenos and onions until they are tender then let the vegetables cool. **This step is done to cookout the strong flavors of the onions, peppers and jalapenos so that the salsa has a smooth taste. This step is especially great for getting rid of the after taste caused by raw onions (which I hate).**
Separate the cilantro leaves from the stems and chop so that the leaves are in fine pieces.
In a medium sized bowl add in the cooled peppers and onions, mangos, cilantro, lime juice, jalapeno seeds and salt. Stir until everything is equally dispersed.
Serve the salsa with tortilla chips or plantain chips and enjoy!
Tip: Save your store bought salsa jars to store homemade salsa to ensure freshness while in the fridge.
